Swordfish - A finer fish I have not met.

Ingredients

2/3 pound swordfish, cubed and skewered
1 cup couscous, uncooked (or rice if couscous in unavailable)
1/4 cup golden raisins
1 apple cored and diced
1 bunch cilantro chopped
2/3 cup Ginger People¨ Ginger Lemon Grass Dressing

Ginger Swordfish, Apple & Couscous Salad

Instructions: Prepare fire for the grill. Cook couscous according to box instructions. When done, add ginger lemon grass dressing, raisins, apple and cilantro to the couscous. Toss. Grill swordfish skewers 3-4 minutes. Place on top of couscous, sprinkle with cilantro and serve.
