Chewy Ginger Snaps are delicious!

Ingredients

1 2/3 cups unbleached all purpose flour
1 tsp. Ground ginger
1 tsp. Ground cinnamon
1 tsp. Baking soda
1/2 tsp. Ground Cardamom
1/2 tsp. Salt
6 Tbsp. The Ginger People Crystallized Baking Chips, minced
1/2 cup(1 stick) unsalted butter, room temperature
1/2 cup packed golden brown sugar
1/2 cup sugar
2 extra large eggs
3 Tbsp. Grated peeled fresh ginger
1/2 cup buttermilk

Triple-Gingerbread

Offer this tender ginger bread with fresh fruit for a lovely dessert.
Instructions: Preheat oven to 350 F. Grease and flour

1/2 x 4 1/2 inch loaf pan. Sift first 6 ingredients into medium bowl. Mix in 3 tablespoons crystallized ginger. Beat the butter and both sugars in large bowl until light and fluffy. Beat in eggs 1 at a time. Mix in fresh ginger. Stir in dry ingredients alternately with buttermilk, beginning and ending with dry
ingredients. Transfer to prepared pan. Sprinkle 3 tablespoons crystallized ginger over batter.
Press ginger lightly into batter. Bake until tester inserted into center comes out clean, about 50 minutes. Turn out onto rack and cool completely.
