Grilled Chicken with Ginger Lime Marinade

1/2 cup The Ginger People Ginger Lime Marinade

11/2 teaspoons curry powder

4 skinless boneless chicken thighs or breasts

1 small onion, sliced

1 cup canned low-salt chicken broth

Vegetable oil

Instructions: Serve chicken with steamed rice to soak up this delicious sauce. Instructions: Whisk first two ingredients together until blended. Pour into an 8x8x2-inch glass baking dish. Add chicken and onion. Cover and let marinate at room temperature 1 hour or refrigerate up to 3 hours, turning chicken occasionally. Preheat barbecue or broiler. Remove chicken from marinade. Strain marinade into a medium saucepan; add broth. Boil until sauce coats spoon, about 15 minutes. Meanwhile, lightly coat chicken with oil. Grill or broil until just cooked through, about 4 minutes per side. Transfer to platter. Spoon sauce over chicken and serve.
