Fresh Thai Spring Rolls with Ginger Peanut Sauce  

1 pkg rice paper rolls  

2 cups shredded cabbage

1 cup chopped scallions

1/2 cup mint, chopped

1/2 cup cilantro, chopped

1 head romaine lettuce

1/3 cup The Ginger People® Grated Ginger

1 cup The Ginger People® Ginger Peanut Sauce  

Instructions: Prepare rice paper rolls according to package instructions. Fill rolls in the following order, placing veggies on the edge closest to you: small piece of lettuce, pinch of carrots, pinch of cabbage, pinch of grated ginger and a pinch of scallions, mint and cilantro. Tuck sides of roll towards veggies and roll like a burrito. Cut in half, arrange on platter and serve with Ginger Peanut Dipping Sauce.
